Good Food

If you are looking for that perfect Cinco de Mayo recipe here's a good one that makes a bunch!



Creamy Chicken Enchiladas


1 (8 oz.) pkg. cream cheese, softened

2 Tbs. water

2 tsp. onion powder

2 tsp. ground cumin

1/2 tsp. salt

1/4 tsp. pepper

5 cups diced cooked chicken

20 (6 in.) flour tortillas

2 cans (10 3/4 oz. each) cream of chicken soup, undiluted

2 cups (16 oz.) sour cream

1 cup milk

2 cans (4 oz. each) chopped green chilies

2 cups (8 oz.) shredded cheddar cheese


Beat the cream cheese, water, onion powder, cumin, salt and pepper until smooth. Stir in chicken. Set aside. In a separate bowl combine the soup, sour cream, milk and chilies. Pour a slight amount of the soup mixture into the bottom of two greased 13"x9"x2" baking dishes.


Place 1/4 cup chicken mixture down the center of each tortilla. Roll up and place seam side down in dishes. Pour remaining soup mixture over enchiladas.


Bake, uncovered, at 350 degrees for 30-40 minutes or until heated through. Sprinkle with cheddar cheese, bake 5 minutes longer or until cheese is melted.

Whenever I try new recipes they are labeled "A Keeper" if we like it. This one is a definite Keeper, especially if your having company over.

Did you make this for yesterday's potluck? I tried a chicken enchilada that was really good, and I wondered if this was the recipe. Looks yummy!

Yes, I did make it for the potluck. Glad you liked it. To feed such a big crowd, I cut the tortillas in half and it helped with portion control.
